A lot of the books by David Goodis would qualify -- The Blonde on the Street Corner or Cassidy's Girl, for instance. Someone has already mentioned Willeford's non-series books.

How about How Late It Was, How Late by James Kelman?

Also, as mentioned, numerous life of the junkie books.

Although I can't think of any specific examples at the moment, aren't there books about the lifestyle of crooks that do not revolve around a particular crime, but the life in the subculture? No Beast So Fierce by Edward Bunker (has anyone read Education of a Felon, yet?) has a lot of crime, but is not really about any one caper, for instance.
