The A.J. Quinnell novel I was trying to think of is called
*Man on Fire*. While the plotline doesn't deal specifically
with the hero's mercenary activities, a lot of background
exposition describes his military career, first as a US
Marine, then as a French Foreign Legionaire, then as a merc
in various African countries. In the book he's taking time
off from being a warrior, and is actually working as a PI of
sorts, having been hired as an operative of an Italian
security firm, then assigned to bodyguard a little girl who's
later kidnapped and murdered by the Mafia. What follows is
kind of a sophisticated version of a Don Pendleton novel, as
the hero goes on a rampage and pits his skills as a
professional soldier against the forces of Organized
Crime.
